Are oyu sure?... i think u dont have that version... try with NBMv3

I thought it would just be a matter of changing out the texture and .3ds files in the items/weapons folder, but I still have the more realistic hammer and a box wrapped in a gun texture. lol. Also curious as to whether it's possible to install just the body parts and none of the weapons (for a separate install I'm working with).

you can change the .3ds and the texture in items/weapons folder but wrestlers will have the old weapon when oyu pick up the one you replaced Ex. when a wrestlers holds a weapon its a VCR and when he/she releases the VCR it turns into a gun. ('cause the body model has a VCR in the 3ds. file

So in order to see the gun when the weapon is on the floor and when its holded you need to edit the body model adn the 3ds files inside items/weapons folder.

and is not possible to make separated packs for the weapons and the bodies.
